As a busy mom I’m all about quick-easy-healthy when it comes to time spent in the kitchen.  Also, I’m a firm believer that if “healthy” tastes anything less than great you should totally fuged-about-it!  With that said, this trail mix would be good ‘raw’ but it wouldn’t get eaten by my family.  They love the salty-sweet-toasty combo which is what I had in mind when I threw this recipe together.

GOJI BERRIES are a SUPERFOOD, but they’re also on the pricey side, which is why they’re perfect for a trail mix.  If I left them alone on the pantry shelf my kids would gobble up them up before I could  say goji-goji-goji!

The goji berry (aka the wolf berry), is one of the most nutritionally dense fruits on the planet.

The GOJI BERRY may seem trendy to us, but this superfood  has been grown and used in Chinese medicine for over 5,00 years.  They are traditionally dried (like raisins) and have a sweet and slight herbal taste.

Nutritional benefits of the Goji:

  • Goji’s are a complete protein source (19 amino acids and all 8 essential amino acids).
  • Goji berries is unique as a dried fruit due to its low glycemic profile (GI=29)
  • 1/4 cup of goji’s contain:
    • 4 grams of protein and fiber
    • 180% of your daily allowance for Vitamin A (the antioxidant that protects your body from free radical damage.  Free radicals can speed up the aging process and can cause cell death and damage).
    • 30% daily value of Vitamin C and 15% for iron
  • Goji berries have a whopping 2-4 times the amount of antioxidants found in blueberries!
  • The goji berry has anti-inflammatory properties and is considered a great digestive aid as well.

Goji berries are generally found at your local health food store or high end, whole foods market in the bulk section next to the packaged, dried fruits.  If you can’t find them at your local health food store, try Amazon:

1 cup SUNFLOWER SEEDS

{high in Vitamin E for heart/brain health, free radical scavenging Manganese and Vitamin B1-Thiamin for neurotransmitter support}

1 cup PUMPKIN SEEDS

{high in Protein, Zinc (bone health), Copper (joint health) and muscle-relaxing Magnesium, energy promoting Iron as well as Manganese.

1 cup COCONUT CHIPS (the bigger the better…usually found in the bulk section)

2 t COCONUT OIL

1/2 cup GOJI BERRIES

SEA SALT to taste

This is one of my go-to-snack-packs when we’re on-the-road or I’m running errands.  It’s a lot easier eating well when you have something like this in the car.
