From crockpot to freezer: Healthy steel cut oats recipes {pumpkin pie} {vanilla almond}

NOTE: I accidentally deleted this post so I’m recreating it ‘down-and-dirty style’…

My family loves oatmeal, so I wanted to create a recipe that adds in some healthy protein (to give it some staying power), and find a way to make it once and enjoy it for many a busy morning!  That’s where the crockpot to freezer comes in….

Simply mix all of the ingredients in a crockpot, cover, cook on the low setting and cook overnight.

After the oatmeal has cooled, use a ice cream scoop to make patties. Scoop onto a cookie sheet covered with parchment paper and pop in the freezer.  Once frozen put patties in a freezer bag for easy access.

Here’s a couple of frozen oatmeal patties ready for the microwave.

Sprinkle on your favorite toppings.  Try coconut, nuts, dried cherries, or for an extra sweet treat a few dark chocolate chips!

PUMPKIN PIE STEEL CUT OATS

2 cups steel cut oats

2 cups plain canned pumpkin

7 1/2 cups water

1/2 cup almond butter

1/4 cup 100% pure maple syrup (optional)

2 t. vanilla

1 T. pumpkin pie spice

1 t. sea salt

VANILLA ALMOND STEEL CUT OATS

2 cups steel cut oats

8 cups water

1/2 cup almond butter

1/4 cup 100% pure maple syrup (optional)

1 T. vanilla

1 T. cinnamon

1 t. sea salt
